Fernandina Beach's main drag is Centre Street, a picturesque street with restaurants and shops housed in old brick storefronts. Centre Street ends at a marina where shrimp boats dock.

If you can't stand the heat, don't heat up the kicthen! With this refreshing menu you can keep cool and prepare a satifying, substanial dinner at the same time. Bake the Macadamia Lemon Bars the Sunday before, and broil the shrimp in the cool of the morning before work, allowing time to chill. While preparing the rest of the meal, after work, there's no need to turn on the oven and swelter in the kitchen. You'll enjoy the cool charm of this pleasant dinner, which is never too hot to handle.
THE FINISHING TOUCH
Monday evening after work is the hottest time of the day, so serve dinner under a large umbrella or the shade of a tree. Consider moving the dinner indoors if the humidity makes the outdoors too oppressive.
Serve on clear or lightly colored glass plates for a cool look (can find these plates at any junk shop in town --- Only need two or four --- matters if you have kids - remember the plates don't have to match) Set out glass or platsic goblets in complementary colors ( I believe I seen these at Fred's).
Keep an eye out for road side produce stands (We have two one on 14th street and one by the Plantation.) Take advantage of their bounty and buy the tomatoes, peppers, cucumbers and green onions for this menu.
This is a great menu for a vacation house at the beach, lake, mountain or just the homestead. Assign a different dish to each person, and serve the meal when people are hungry. This is definitely a dinner that can be made at different times by different people -- perfect for a group with individual schedules.
Summer Fruit Coolers
2 tablespoons sugar
1 cup sparkling water or bottled water (Not tapped the sulfar could make the whole experience bad)
1/2 cup orange juice
1 bottle of Welch white grape juice
1/2 cup green grapes
1 meduim orange, cut into havles and thinly sliced (reason for it to be thinly sliced -- more slices -- each sliced is for each person who aggrated you today)
Mix sugar, sparkling water, orange juice and white grape juice (maybe we should really think of changing this ingredient to white wine) in large pitcher. Stir in Fruit. Chill for 1 hour. Serve coolers over ice (Do you feel better?)
Gazpacho Pasta Salad
1 pound of rotini pasta, cookes and drained
1/2 cup of cilantro
8 onions
3 roma tomatoes
1 small yellow bell pepper
1 large cucumbers
Vinaigrette
Combine all ingredients in large bowl until well blended.
Marinated Shrimp
1 1/2 pounds large raw shrimp, shelled
1 tablespoon soy sauce
1 tablespoon lemon juice
1 teaspoon vegetable oil
1 teaspoon gingerroot
Place shrimp in glass baking pan. Mix remaining ingredients; pour over shrimp. Cover and refrigerate at least 30 minutes (Time enough for another drink or give a bath to the youngest.)
Set oven control to broil. Drain shrimp; arrange on rack in broiler pan. Broil 4 inches fron heat 5 to 8 minutes, turing once, until shrimp turn pink. Refrigerate shrimp at least 30 miunutes until cold (Time enough for another drink or make sure the homework is done.)
Macadamia-Lemon Bars
1 cup all-purpose flour
1/2 cup margarine or butter
1/2 cup powdered sugar
1/4 cup chopped macadamia nuts
2 eggs
1 cup granulated sugar
2 tablespoons lemon juice
2 teaspoons grated lemon peel
1/4 teaspoon salt
Heat oven to 350 degrees. Mix flour, margarine, powdered sugar and nuts in medium bowl. Press in ungreased square pan. Bake 20 minutes.
Beat remaining ingredients, except nuts, until light and fluffy. Pour over hot crust; sprinkle with nuts. Bake 20 to 25 minutes until no indentation remains when touched lightly in center; cool. cut into bars.
